The soya bean ranks high among the leguminous crops of the world both in its content of protein and its nutritional quality. It occupies an intermediate position between legumes and oil seeds, containing more protein than most of the legumes but less fat than most of the oil seeds.

Production Process for soybean oil production

Three methods are used for extraction of oil from soyabean, they are hydraulic press, screw press and solvent extraction. However, the solvent extraction involves technology that is widely used in commercial operation.

In solvent extraction, conditioned and flaked Soyabean enter an extractor, which is vapour-sealed. The system permits the flakes to enter and prevents the vapour from escaping. Commonly, percolation extractors are used for soybean. A liquid solvent, usually hexane, is percolated through a bed of soy flakes, dissolving the oil. The miscella, (the mixture of oil and solvent) leaves the bottom of the bed through a perforated plate or mesh screen. On leaving the extractor, the flakes contain 1 per cent oil, 7 percent of water and 35 per cent of hexane.

The next step is to remove the solvent from the flakes. A desolventizer-toaster is used. In the first, the flakes (7 per cent mixture) pass through steam, which strips away the hexane and raises the moisture of the flakes to about 20 per cent. They are then dried to about 10 per cent moisture, this treatment destroys the anti-nutritional factors such as trypsion inhibitors, unease and hemagglutinins. The toasted flakes are ground into meal, which contains about 400ppm hexane. In flash desolventization, the hexane-soaked flakes enter a stream of super heated hexane vapour. The latent heat generated evaporates the liquid hexane of the flakes. In a vapour desolventizer on the other hand, the wet flakes fall through a vapour of superheated hexane, and the hexane is flashed off in a manner similar to the flash desolventizer. In both the flash and vapour desolventizer, the flakes receive only a mild heat treatment.

The micella, which contains about 25-30 per cent oil, goes into a two-stage evaporates. The oil then move into a stripper at 99.8 per cent oil and is called

crude soybean oil. The vapour is cooled enough for the hexane to condense and return to the solvent tank where it is reused.

The extracted crude soybean oil contain small quantities of wax, pigment and minerals including phosphorus, sodium, iron and copper. The presence of B-carotene gives the oil normally undergoes refining comprising of degumming, neutralising, bleaching, hydrogenation and deodorization. The refined oil is used in the manufacture of cooking oil, drying oil, salad dressing and ice cream. The meal which is by-product of oil extraction can be processed into flour, gluten, protein concentrate or protein isolate.
